چکیده

Human beings have been preparing fermented beverages for more than 5000 years. Materials excavated from Egyptian tombs dating to the third millennium B.C. demonstrate the operations used in making beer and leavened bread. The history of fermentation, whereby sugar is converted to ethanol by the action of yeast, is also a history of chemistry. The word gas was coined by van Helmont in 1610 to describe the bubbles produced in fermentation. Leeuwenhoek observed and described the cells of yeast with his newly invented microscope in 1680.

Stereoselective Enzymatic Reduction of 1,4-Diaryl-1,4-Diones to the Corresponding Diols Employing Alcohol Dehydrogenases

Due to the steric hindrance of the starting prochiral ketones, the preparation of chiral 1,4-diaryl-1,4-diols through the asymmetric hydrogen transfer reaction has been mainly restricted to the use of metal-based catalysts, oxazaborolidines, or organocatalysts. Herein, we demonstrated the versatility of oxidoreductases, finding overexpressed alcohol dehydrogenase from Ralstonia sp. (E. coli/Ras...

Enzymatic characterization of a recombinant carbonyl reductase from Acetobacter sp. CCTCC M209061

BACKGROUND Acetobacter sp. CCTCC M209061 could catalyze carbonyl compounds to chiral alcohols following anti-Prelog rule with excellent enantioselectivity. Therefore, the enzymatic characterization of carbonyl reductase (CR) from Acetobacter sp. CCTCC M209061 needs to be investigated. RESULTS A CR from Acetobacter sp. CCTCC M209061 (AcCR) was cloned and expressed in E. coli. AcCR was purified...

Toxicity of Aromatic Ketone to Yeast Cell and Improvement of the Asymmetric Reduction of Aromatic Ketone Catalyzed by Yeast Cell with the Introduction of Resin Adsorption

Asymmetric reduction of the prochiral aromatic ketone catalyzed by yeast cells is one of the most promising routes to produce its corresponding enantiopure aromatic alcohol, but the space-time yield does not meet people’s expectations. Therefore, the toxicity of aromatic ketone and aromatic alcohol to the yeast cell is investigated in this work. It has been found that the aromatic compounds are...

A Novel Microbacterium sp. for Asymmetric Reduction of Simple Aromatic Ketone and Its Key Reductase

A novel strain, Microbacterium sp., which can be used as a catalyst in the asymmetric reduction of simple aromatic ketones to produce chiral aromatic alcohols, was isolated from soil by microbial screening. Using acetophenone as a model substrate for asymmetric reduction, 82 % reaction yield with more than 99 % enantiomeric excess of (R)-1-phenylethanol were achieved under the optimal condition...
